Today’s Christmas evening so I wanted to share with you some dishes that form a perfect vegetarian Christmas dinner, whether you’re a veggie or not. At our family home we usually go for a very low-maintenance Christmas dinner so I won’t be making all of these dishes but a couple of them will be definitely be enjoyed tonight.
DRINKS //
Pomegranate Cranberry Sparklers: Cocktails are obligatory at Christmas evening. A great drink can set the mood for the evening and therefore I wanted to start with this beauty.
APPETIZERS & SOUP //
We are a family that loves lots of small appetizers. Some family member like it even better than the main course. Therefore we always serve plenty of options.
Roasted Camenbert: Melted cheese is the best! This dish is so good with some roasted bread and because it’s a real sharing dish, I can only recommend it for a family or friends dinner.
Smoky Vegetable Bruschetta with Chili: It doesn’t always have to heavy dishes at Christmas dinner. We love to serve lots of veggies and therefore this roasted vegetable dip is perfect to accompany heavy cheese. It’s actually a dish made on the BBQ but the oven works just fine.
Roasted Garlic and Tomato Soup: Roasted or smoked garlic combined with tomatoes and maybe also some roasted bread. Sounds like heaven to me.
DINNER //
Butternut Squash and Lentil Pot Pie: Christmas dinner often means serving plenty of comfort food. Even through you’re cooking vegetarian, doesn’t mean that you can’t serve comfort food. A vegetable pot pie is perfect winter food that will go down like a charm.
Roasted Vegetable Mix: Thinking about the deep fried celeriac fries I ate at the Vandemoortele event, I was thinking of roasting some celeriac in the oven together with fries. If you want to add some other vegetables this recipe is perfect.
Salad with Chili Orange Dressing: I love the idea of having a tangy chili dressing, therefore this salad would be a great starter. Moreover the orange would go perfect with the butternut squash in the vegetable pot pie. As always you can add all the ingredients that you like yourself.
DESSERT //
Salted Caramel Molten Chocolate Cakes: There’s always room for chocolate. Especially when you add in salted caramel. Can’t wait!
