Last week I was invited in Brussels to discover deep frying with Vandemoortele. I have to be honest, I don’t own a deep-fryer and am not planning on buying one. I don’t like too much grease in my food and I especially don’t like the smell. Therefore I was quite curious to see whether they could change my mind and whether they could teach me something on actually including deep fried food in a healthy diet. This was also my first food-related event so I was actually quite excited.
During the evening, several dishes were tasted and approved but this one stuck. The combination of beetroot and mayonaise was very nice. However when redoing this dish, I might add in some parsley and some yoghurt to make the sauce lighter. I would also replace the breadcrumbs with Panko breadcrumbs (found in your Asian grocery shop) and add in some dried chili flakes. During the evening we tried some celeriac fries rolled in Panko (dipped dry and rolled in egg and Panko) as well and it was delish. Below you will find the full recipe.
Ingredients (for 4 people)
– 12 langoustines
– 100g flour
– 4 eggs
– 100g breadcrumbs
– Flat leaf parsley
– 1tl dried oregano
– 2 sprigs of thyme
– salt & pepper
– 1 cooked red beetroot
– 1 cup of mayonaise
– 1 tablespoon of lemon juice
Start out by peeling the langoustines. Add finely chopped parsley and thyme and the dried oregano to the breadcrumbs and place in a large bowl. Divide the flour and the eggs in two other bowls. Dry the langoustines on some kitchen paper and coat them with the flour first, followed by the egg and breadcrumbs. Deep-fry the langoustines until golden brown at 175°C in Vandemoortele Ecellence deep-frying oil. Remove excess oil by putting them on some kitchen paper before plating.
In the meantime put the cooked beetroot in the blender and mix it in with the mayonaise and lemonjuice. Don’t add it all on at once, go spoon by spoon until you have a nice loose but not too runny consistency. Serve the langoustines (2 per person) with the beetroot-mayo and enjoy.
